Egg Replacer Powder Recipe

If you're vegan or sensitive or allergic to eggs, finding cookies, muffins and cakes that are egg-free can be a challenge.
At Red Plate Foods where our entire bakery is egg-free and vegan, we use the ingredient combination. The starches and gums provide the adhesion eggs lend to baked goods, and the baking powder makes your muffins and cakes rise like traditional egg based recipes.
Ingredients
2.5 cups arrowroot powder or tapioca starch
0.5 cups baking powder
1 Tablespoon guar gum powder or xanthan gum
Instructions
Whisk 1.5 tsp Egg Replacer Powder into 2 tablespoons cold water to = 1 egg.
Notes
We use corn-free baking powder to keep our products non-GMO and allow those with corn sensitivities to enjoy. Happy baking!
